Mexican Meatballs

Ingredients:

  • 2 lbs Bertolino Foods Seasoned Ground Beef for Chili or Tacos
  • 1 Cup Crushed corn tortilla chips
  • 2 eggs
  • 1 lbColby/Jack cheese diced into ½ inch cubes
  • 14 oz Enchilada sauce
  • 1 Cup Sour cream
  • 1 Cup Refried Beans (optional)
  • Chopped Fresh Cilantro
  • Sliced fresh chilis like Fresno, Jalapeno, and serrano
  • Oil for sautéing
  • Salt and pepper

Method:

  1. Combine seasoned ground beef with tortilla crumbs, eggs , salt and pepper.
  2. Mix well until evenly combined. 
  3. Portion into 1.5 oz portions.
  4. Place one cube of cheese into the center of a portion of ground beef mix.
  5. Form the beef around the cheese evenly and roll in your hands to round and seal the cheese in the ball.  Repeat until all the meat portions are used.
  6. Heat oil in a large sauté pan.
  7. Gently sear your cheese/meat balls on multiple sides.
  8. Turn down the heat and add the enchilada sauce to the pan and bring to a simmer.
  9. Once simmering cover with a well-fitting lid and simmer until meat is cooked through and cheese is melty.
  10. Once cooked, if you are serving with refried beans heat thoroughly in a separate pan.

To Serve:

  • Spoon refried beans onto a serving plate and spread evenly.
  • Place hot meatballs on the refried beans.
  • Drizzle with sour cream.
  • Garnish with chopped cilantro and sliced chilis.
