- 2 lbs Bertolino Foods Seasoned Ground Beef for Chili or Tacos
- 1 Cup Crushed corn tortilla chips
- 2 eggs
- 1 lbColby/Jack cheese diced into ½ inch cubes
- 14 oz Enchilada sauce
- 1 Cup Sour cream
- 1 Cup Refried Beans (optional)
- Chopped Fresh Cilantro
- Sliced fresh chilis like Fresno, Jalapeno, and serrano
- Oil for sautéing
- Salt and pepper
Method:
- Combine seasoned ground beef with tortilla crumbs, eggs , salt and pepper.
- Mix well until evenly combined.
- Portion into 1.5 oz portions.
- Place one cube of cheese into the center of a portion of ground beef mix.
- Form the beef around the cheese evenly and roll in your hands to round and seal the cheese in the ball. Repeat until all the meat portions are used.
- Heat oil in a large sauté pan.
- Gently sear your cheese/meat balls on multiple sides.
- Turn down the heat and add the enchilada sauce to the pan and bring to a simmer.
- Once simmering cover with a well-fitting lid and simmer until meat is cooked through and cheese is melty.
- Once cooked, if you are serving with refried beans heat thoroughly in a separate pan.
To Serve:
- Spoon refried beans onto a serving plate and spread evenly.
- Place hot meatballs on the refried beans.
- Drizzle with sour cream.
- Garnish with chopped cilantro and sliced chilis.
